Eggplant Sambal with Acetes Shrimp and Roasted Stink-beans

4 cloves garlic, finely chopped 
4 tbsp red chilli paste 
30g shrimp 
3 long eggplants, cut in half 
1 tsp ground shrimp paste 
1 tbsp tamarind juice 
1 pod stink bean 
1 tsp turmeric powder 
2 tbsp vegetable oil 



  1. Mix the eggplants (that have been cut in half) with a little salt and then fry in the vegetable oil until partially softened.
  2. Set the eggplants aside and retain the oil in the pan. To the same pan, sauté the garlic and chili paste, then add the shrimp paste.
  3. Add half the shrimp, stir and add the tamarind juice, salt and a little sugar. Finally, add the eggplants and mix well.
  4. Fry the remaining shrimp until crispy for garnishing the eggplant.
  5. Boil the stink pod until wilted, then smear it with turmeric powder and salt. Roast it whole over a flame until fragrant.
  6. Serve with the eggplant.
